Ceylon is the old name of the state Sri Lanka, a former British colony. The cultivation in big quatinties started in Ceylon around 1870 after the island's main coffee crops were distroyed by a fungal disease. Even though the country changed the name to Sri Lanka there was made the decision of keeping the tea's name because it was already very famous and a state brand.

About Ceylon tea: Ceylon tea can be classified in 3 categories: low field crops, medium field crops and high altitudes crops.There are 7 regions where Ceylon tea is cultivated and each one of those imprint different characteristics to the tea based on their geographical placement. Usually the tea from a high altitude regions will have a more light colour and floral notes and the ones from low altitudes are more redish dark aspect when infused and even the leaves are more dark. Ceylon has floral-woody notes witha a taste softer than Assam but stronger than Darjeeling and a high content of caffeine. 

Ceylon tea is the most popular base for Iced Teas but they can be as well served hot.

Food pairing: They can be served at breaksfast or bruch and can be mixed with milk to calm the roughness and bitterness, or served with lemnon, honey or sugar into the iced tea. Can be paired with creamy and sweet foods-carrot cakes/ creme brulee etc.

Using with: glass infuser mug, teapot with infuser, infuser & strainers, paper filer bag. Preparation: 1 tbs loose tea -into an infuser/pot/paper tea bag 200 ml water boild at 85-98 degrees

Infusing time 3-5 minutes
