Origin and varietal history:
The Java varietal, often associated with the Indonesian island of Java, was introduced there by the Dutch in the early 19th century. Genetic studies have revealed that Java is a selection from the Ethiopian landrace population known as Abyssinia. This varietal was later introduced to Central America, including Nicaragua, where it thrives at high altitudes and is appreciated for its disease resistance and low input requirements.
Cultivation and processing:
Grown at elevations ranging from 850 to 1,650 meters above sea level in regions like Nueva Segovia, Nicaragua, Java Abyssinia benefits from the country's rich volcanic soils and favorable microclimates. Producers such as Luis Alberto Balladarez cultivate this varietal on farms like Finca La Bendición and Finca Regalo de Dios. The coffee is typically processed using the washed method, which involves fermenting the cherries for 24 hours before drying them on African beds under shade for 13 days.
