Short History: Sencha is one of the three main Japanese types of tea. Japanese tea is originated from the Tang dynasty of China, which dates during the Heian period of Japan when Chinese influences were at its peak. Before that, matcha was the preferred drink of choice in Japan. However, once sencha was introduced, it became a go-to for the Japanese.Tea seeds were introduced to Japan and were first planted at Toganoo. These seeds were later spread in Uji region , which became the site to produce the highest quality of tea leaf in Japan. Since then Sencha become the most popular tea in Japan and the most commonly cultivated green tea in Japan ( aproximatively 80%). China Sencha is type of Sencha cultivated in China with slightly different notes from Japanese one.
About China Sencha tea: it's a delicate tea, with a sweet taste and a fresh and vegetal aroma. Compared to other varieties of green tea, China Sencha has a lower caffeine content, so it can be consumed without problems in the evening, or before bedtime.
This tea is processed by the steaming method. The "forming" process preceding drying gives the tea its characteristic leaf shape.
China Sencha is harvested in the spring and it's brewed from young, lightly steamed leaves.The color ranges from a pale greenish-yellow to a rich light green and the taste is less bitter, often offering a lot of umami and a persistent, sweet flavor.
Very rich in antioxidants, it's a good support in fight bacteria and viruses, in weight loss diets, boost the focus and a good aid when we want to relax.
Food pairing: Seafood and umami-rich foods like shiitake mushrooms, oysters, tuna, and seaweed. As well goes well with fresh fruits.
